Including desserts (or an evening snack) in your ongoing eating program is important because it's a demonstration to self that your own satisfaction is valued and is not being sacrificed. But there's a trick to desserts, and it's this. It's absolutely essential to develop a willingness to prepare your own desserts rather than buy them because other than there are very few sugar-free, white-flour free commercially-manufactured choices available to you. Of course, you can always give yourself a piece of fruit, and fruit is an excellent choice. But there are many other interesting options available to you. The good news is that most of the desserts included here freeze well. That means you can prepare a recipe; freeze the servings that you're not eating in the next couple of days, and have something delicious later on that's quickly and easily available that doesn't have to be cooked.
I have deliberately chosen high fiber grain substitutes for white flour that will be somewhat familiar to you such as 100% stone ground whole wheat flour, wheat bran, rolled oats, oat bran, ground flax and soy flour. That said, you are not limited to these choices. If, for example, you do not wish to eat anything made with wheat, you can easily substitute other flour choices like coconut flour, blanched almond flour, bean flour and others. A change in grain may require more liquid in the recipe, but that's simple enough to figure out. Just keep adding more liquid (whatever is called for in the recipe) in one or two tablespoon increments until the batter is moist.
Nowadays most large grocery stores carry expanded grain choices and/or have an organic or health food section. So if you live in the suburbs or a large metropolitan area, it will be easy for you to find the recommended alternatives to white flour without too much effort. But if you live in a rural area or your grocery store doesn't carry the recommended grains, you will need to find a health food store and plan to make a visit every other month.
